We gathered with close friends to enjoy Sunday dinner tonight, along with this wine. The 2004 Zymé Amarone Della Valpolicella Riserva “La Mattonara” is an Amarone that is so deft in its touch, that not only does its texture and mouthfeel bend more closely toward Burgundy, it’s almost impossible to fathom its whopping 16% alcohol as it dances like a ballerina on the palate. The dried cherry, leather, licorice blossoms, thyme and black pepper notes seamlessly paired with tonight’s dinner of Garam Marsala braised short ribs, black truffle mashed Yukon Gold potatoes and cumin spinach. The late great Giuseppe Quintarelli passed on his infinite knowledge of Amarone winemaking to his son-in-law Celestino Gaspari, owner, proprietor and winemaker of @zyme_winery located in the heart of Valpolicella Classica an ancient sandstone quarry that dates back to the 15th century. With his own unique style of Amarone, Signor Gaspari has most certainly earned his place in the pantheon of great Italian winemakers.
